In a lavastone grill the cooking process is made by electric heaters in a closed steel oven that heat the lavastone. The lava stone set with oven emits no smoke or smell as the cooking process is done live by the customer at his table. This eliminates the NEA requirement of having chimney and exhaust in the kitchen as there is no smoke or smell emitted from oven that only is used to heat the lava stone and not the food. Once the lavastone is heated to 400 degree centigrade the marinated meat is placed on the stone and served to the customer to cook in alfresco style dining. Cooking time is very quick within 2/5 mins.
As there is no cooking process within the kitchen restaurants are able to reduce kitchen staff for their business. Equipment is reduced to only one oven to heat stones.
